2 or 3 organic Cucumbers, peeled and cut
into bite-sized chunks
1/3 cup fresh organic Cilantro, minced
1 sliced organic green onion
½ of one small to medium organic red
pepper, julienned
Juiced of one lime
2 tsp Olive Oil
½ tsp Sea Salt, or to taste
½ tsp white pepper, or to taste
In a bowl, combine prepared vegetables. Sprinkle with lime juice. Drizzle with olive oil. Sprinkle with sea salt and white pepper. Toss together until well blended. Place in an airtight container and refrigerate several hours to blend flavors.
